Our flagship collection of wines made from our most unique vineyard sites on the property. They represent an authentic expression of Sevenhill and the pinnacle of regional characteristics of the Clare Valley.

A limited range of wines honouring the founders of the Jesuits who would, centuries later, settle Sevenhill and build the very first winery in the Clare Valley, and one of the first wineries in Australia. 

In celebration of Sevenhill’s Jesuit Winemaker Emeritus, the fruit is only taken from a tiny selection of low-.yielding vines planted by Br May in the 1970s.A very limited release of small bottlings of wine suited to long term cellaring and only made from exceptional vintages

Long before table wines became popular in Australia, fortified wines were very much the order of the day. While palates have developed and techniques improved, there is still something very special about a complex and well balanced sweet wine.

Minimal intervention is the hallmark of our sacramental wines in conformity with the requirements of Canon Law and is distributed throughout Australia and exported throughout the South Pacific along with Singapore, Papua New Guinea, Timor-Leste, Indonesia, Vietnam and Malaysia.
