2020 St Francis Xavier Single-Vineyard Riesling

The 2020 St Francis Xavier Single-Vineyard Riesling was produced with fruit from the Weikert Vineyard. This small vineyard (0.82ha) was planted in 1978 and consistently produces outstanding fruit to meet premium requirements. The highly regarded clone from Geisheim, is planted in the protected site. The vineyard’s red-brown loam over shale and cool, sheltered aspect are key elements in achieving the balanced growth and fine qualities we seek for our premium Rieslings.
A second year of very low winter rainfall combined with fluctuating October temperatures, resulted in historically low yields across all varieties. Thankfully, the conditions during ripening were temperate, allowing the vines to slowly ripen the small crop. This gradual ripening was ideal for flavour and tannin development. The fruit was picked at the optimum time. The Weikert Riesling was hand harvested on the 20th February.
The hand-picked fruit was loaded directly into the press and pressed as whole bunches. Whole bunch pressing provides very clean juice but a low overall extraction. Only the first 500L/T of juice extracted was used for this wine. After settling, fermentation was long and slow using QA23 yeast strain. Minimal fining and natural patient settling prior to bottling in July 2020.
Fresh lime juice and pith aromas with a mineral crushed chalk element. A very pure aroma. The palate is ultra-fine, with subtle fruit and structure seamlessly balanced across the palate. The acidity is soft but evident and lingering long after tasting.
