2019 Inigo Pinot Gris

The 2019 Pinot Gris is made with fruit from the Adelaide Hills region, considered one of the pre-eminent areas for this variety in Australia. Pinot Gris is regarded as perfectly suited to the Adelaide Hills, where the elevation of the vineyards moderates the climate, providing cool conditions during the growing and ripening season. This maximises fruit character and ensures the retention of natural acidity in the grapes. Fruit for the Inigo Pinot Gris was sourced from a single-vineyard site in the north-west of the Hills at Paracombe, planted in 1999.
The combination of a dry 2018 winter and a cold spring led to the vines setting a lower than average crop. Prolonged dry conditions and events of extreme heat during January and February reduced yields further. Picking commenced on the 26th of February and progressed at a frantic pace. With daytime maximum temperatures reaching above 35C for eight consecutive days, most varieties reach the desired sugar levels quite quickly. The last fruit came through the winery doors on the 19th of March.
Sourced from the Adelaide Hills, the 2019 Pinot Gris was the only non-estate grown fruit crushed at Sevenhill in 2019. To minimise extraction and retain delicacy, the fruit was hand-picked at night and then transported to Sevenhill for gentle pressing to minimize phenolic extraction. The juice was cold settled and fermented with a carefully selected yeast strain to highlight the spiciness of Pinot Gris. Some residual sugar remains post fermentation. The wine was promptly stabilised and clarified prior to bottling in early June.
Sourced from the Adelaide Hills, the 2019 Pinot Gris displays aromas of peach, pear, almond and hints of nutmeg. The palate is full bodied with sweet pear fruit flavours and a warm nutty finish.
